Ingredients :
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon coarsely ground pepper
- 2-1/2 pounds whole chicken wings
- Optional: 1 cup wing sauce or barbecue sauce, and ranch dressin
Directions :
- Preheat smoker to 250°. Add wood chips or pellets to smoker according to manufacturer’s directions.
- In a large bowl, combine baking powder, garlic powder, salt and pepper.
- Using a sharp knife, cut through the two wing joints; discard wing tips. Place remaining wing pieces in spice mixture, toss to coat. Let stand 30 minutes.
- Place on greased smoke rack, and smoke until tender and juices run clear, 2 to 2-1/4 hours. For extra crispy wings, place on rack in broiler pan. Broil 3-4 inches from heat until crisp, 2-3 minutes. If desired, toss in wing sauce and serve with ranch dressing.
