Ingredients :
- 1 pound uncooked spaghetti or linguine
- 1/4 cup olive oil
- 1 cup chopped sweet red pepper
- 1 cup chopped green pepper
- 1/3 cup chopped onion
- 3 garlic cloves, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon dried oregano
- 1/8 teaspoon crushed red pepper flakes
- 1/8 teaspoon pepper
- 2 pounds peeled and deveined cooked shrimp
- 1/2 cup grated Parmesan cheese
Directions :
- Cook pasta according to package directions. Drain, set aside.
- In a Dutch oven, heat oil over medium heat. Add peppers and onion; cook until tender, 4-5 minutes. Add garlic, salt, oregano, red pepper flakes and pepper; cook one minute longer. Add shrimp; cook until shrimp turn pink, 4-5 minutes. Add cooked pasta, toss to coat. Sprinkle with Parmesan before serving.
