Ingredients :
- 1 pound uncooked penne pasta
- 2 tablespoons olive oil
- 1/2 cup finely chopped onion
- 3 garlic cloves, minced
- 1 to 1-1/2 teaspoons crushed red pepper flakes
- 3 tablespoons tomato paste
- 1 can crushed tomatoes
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/4 teaspoon pepper
- 1/4 cup grated Parmesan cheese
- Chopped fresh parsley, optional
Directions :
- Cook pasta according to package directions; reserve 1 cup pasta water. Drain remaining pasta water; set aside.
- In a large skillet, heat oil over medium-high heat. Add onion; cook until soft, 4-5 minutes. Stir in tomato paste, garlic and red pepper flakes; cook 1 minute longer. Stir in crushed tomatoes, reserved pasta water, salt, sugar and pepper. Reduce heat; simmer, uncovered, until sauce is thickened, about 25 minutes, stirring occasionally.
- Add cooked pasta to sauce, toss to coat. Sprinkle with Parmesan and parsley, if desired.
