Lime Curd

Lime Curd is one of my favorite dessert basics, and this version is easy enough that even beginners can master it immediately. This one-bowl recipe has just 4 ingredients and simmers gently over a double boiler until thickened. It really is as simple as that!

Ingredients :
  • 3 large eggs
  • 1 large egg yolk
  • 2 1/4 cups sugar
  • 1/2 cup butter cubed
  • 1 1/2 teaspoons lime zest
  • 3 ounces lime juice
Directions :
  1. Bring a saucepan of water to a gentle simmer and set a glass or metal bowl over the top to create a double boiler. In the bowl, whisk together eggs, yolks, sugar, butter, lime zest, and lime juice.
  2. Cook over the simmering water, stirring frequently, until very thick, about 20 to 25 minutes (the curd must reach 170 degrees on a thermometer to thicken). Strain through a fine-mesh strainer or cheesecloth, then cover and chill completely.
