Directions :
  1. 2/3 cup all-purpose flour
  2. ▢1/2 teaspoon baking soda
  3. ▢1/2 teaspoon Salt
  4. ▢8 ounces whole-milk ricotta cheese (see note 1)
  5. ▢2 large eggs separated, plus 2 large egg whites
  6. ▢1/3 cup whole milk
  7. ▢1 teaspoon lemon zest
  8. ▢4 teaspoons lemon juice (from 1 lemon)
  9. ▢1/2 teaspoon vanilla extract
  10. ▢2 tablespoons butter melted
  11. ▢1/4 cup granulated sugar
  12. ▢butter and maple syrup or fresh blueberries, for serving
