Ingredients :
- 2 large eggs, beaten
- 3/4 cup almond flour
- 3/4 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1-1/2 pounds chicken tenderloins, cut into 2-in. chunks
Directions :
- Preheat air-fryer to 400°.
- Place beaten eggs in a shallow bowl. In another shallow bowl, combine almond flour, Parmesan, salt, pepper, garlic powder, onion powder and paprika. Dip each chicken chunk in egg, then the almond flour mixture, coating all sides. Shake excess breading from the chicken; transfer to a plate.
- Coat basket with cooking spray. Place breaded nuggets in the air fryer basket 1/2-in. apart; spritz nuggets with cooking spray. Cook 4 minutes; turn each nugget, spritz with cooking spray. Cook another 4 minutes or until breading is crispy and nuggets are cooked through.
