Ingredients :
- 1 Scotch bonnet pepper, seeds and ribs removed, finely minced
- 6 garlic cloves, minced
- 4 tablespoons reduced-sodium soy sauce
- 4 tablespoons packed brown sugar
- 4 teaspoons paprika
- 4 teaspoons ground ginger
- 4 teaspoons ground allspice
- 3 teaspoons salt
- 2 teaspoons onion powder
- 1 teaspoon pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon cayenne pepper
- 8 bone-in, skin-on chicken thighs
- Hot sauce, optional
Directions :
- In a large glass bowl, combine first 14 ingredients. Add chicken; toss to coat. Cover; refrigerate at least 1 hour or overnight.
- Preheat grill to medium. Grill the chicken, covered, over indirect medium heat for 30-40 minutes or until a thermometer reaches 170°-175°. If desired, serve with hot sauce.
