Grilled Corn Salad

This grilled corn salad is easy to make and packed with veggies and flavor, which means it's always welcome on the table.

Ingredients :
  • 6 medium ears sweet corn, husked
  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 1/2 tablespoon grated lime zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups cherry tomatoes, halved
  • 1 cup chopped sweet red pepper
  • 1/2 cup chopped cucumber
  • 1/2 cup fresh cilantro leaves, chopped
  • 1/4 cup chopped red onion
  • 1/4 cup chopped green onions
  • 1/4 cup Cotija cheese
  • 1 medium ripe avocado, peeled, chopped
Directions :
  1. Preheat grill to 350°. Grill corn until lightly charred on all sides, about 20 minutes. Let cool. Use a sharp knife to cut kernels off the cob; discard cob.
  2. In a large bowl, whisk together oil, lime juice, lime zest, salt and pepper. Stir in corn, tomatoes, red pepper, cucumber, cilantro, red onion, green onion and cheese. Cover; refrigerate until ready to serve. Just before serving, fold in avocado.
