Greek Tuna Salad

This Greek tuna salad is just the thing when you want a light lunch that will keep you satisfied without weighing you down. The combination of chickpeas, feta and tuna packs plenty of fiber and protein, but this is still very much a healthy dish.

Ingredients :
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cans no-salt-added garbanzo beans, rinsed and drained
  • 2 cans albacore white tuna in water, drained
  • 1/2 cup chopped cucumber
  • 1/2 medium red onion, chopped
  • 1/2 cup crumbled feta cheese
Directions :
  1. In a large bowl, whisk together olive oil, lemon juice, salt and pepper. Stir in chickpeas, tuna, cucumber, onion and feta. Cover; refrigerate until ready to use.
