Firecracker Shrimp

This sticky, spicy firecracker shrimp pairs well with fluffy rice or stir-fried noodles. Bonus: It's a 30-minute meal, perfect for busy nights.

Ingredients :
  • 1/3 cup sweet chili sauce
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon Sriracha chili sauce
  • 2 garlic cloves, minced
  • 1/2 teaspoon grated lime zest
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-1/2 pounds uncooked medium shrimp, peeled and deveined
  • 3 tablespoons canola oil
  • Hot cooked rice
  • Optional: Sliced green onions and sesame seeds
Directions :
  1. In a small bowl, whisk the first 6 ingredients. In a large bowl, combine cornstarch, salt and pepper. Add shrimp; toss to coat.
  2. In a large skillet, heat oil over medium heat. Add shrimp; cook and stir until shrimp turn pink, 2-3 minutes. Remove shrimp and keep warm. Add chili sauce mixture to skillet. Bring to a boil. Cook and stir until slightly thickened. Add shrimp back to skillet, stir to coat. Serve with rice and, if desired, green onions and sesame seeds.
