Ingredients :
- 2 pounds ground beef
- 2 medium onions, chopped
- 2 garlic cloves, minced
- 4 cups beef broth
- 2 cans Ranch Style beans, undrained
- 2 cans diced tomatoes, drained
- 2 large potatoes, peeled and chopped
- 2 cans diced tomatoes with green chilies, undrained
- 2 cups frozen corn
- 1 can mixed vegetables, drained
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Sliced jalapeno pepper, optional
Directions :
- In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles. Add garlic; cook 1 minute longer. Drain. Stir in next 11 ingredients.
- Bring to a boil. Reduce heat; cover and simmer until potatoes are tender, 10-15 minutes. Serve with sliced jalapeno if desired.
