Ingredients :
- For the red wine vinaigrette:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon Dijon Mustard
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- For the salad:
- 1 can chickpeas drained and rinsed
- 1 cucumber peeled, quartered lengthwise and diced
- 1 1/2 cups grape tomatoes halved
- 1/2 red onion thinly sliced
- 1/2 cup pitted Kalamata olives halved
- 4 ounces feta cheese cut into cubes
- 1/2 cup minced fresh parsley or other fresh herbs such as basil, mint, and cilantro
Directions :
- To make the dressing, in a small bowl whisk together olive oil, red wine vinegar, Dijon mustard, oregano, and salt and pepper to taste (I like ½ teaspoon salt and ¼ teaspoon pepper).
- In a large bowl, add chickpeas, cucumbers, grape tomatoes, red onion, Kalamata olives, feta cheese, and parsley. Drizzle with dressing and toss to combine.
