Ingredients :
- 2 tablespoons olive oil or butter
- 1/2 medium head cabbage, chopped
- 1/2 medium onion, chopped
- 2 medium carrots, chopped
- 1 cup reduced-sodium chicken broth
- 1 tablespoon cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon sugar
- 1/8 to 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon caraway seeds, optional
Directions :
- Heat oil in a Dutch oven over medium heat. Add cabbage, onion and carrots; cook 4-5 minutes or until slightly soft. Stir in chicken broth, vinegar, salt and pepper; bring to a simmer.
- Cover; reduce heat to medium-low. Simmer until tender, 20-25 minutes. Stir in sugar, red pepper flakes and if desired, caraway seeds.
