Ingredients :
- 8 bacon strips
- 16 sea scallops, side muscles removed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons olive oil
- Chopped fresh parsley
- Seafood cocktail sauce, optional
Directions :
- Place bacon in a large nonstick skillet. Cook over medium heat until partially cooked but not crisp. Remove to paper towels to drain. Cut bacon strips lengthwise in half.
- Wrap a halved bacon strip around each scallop; secure with a toothpick. Sprinkle with salt and pepper.
- Wipe skillet clean if necessary. Add oil; heat over medium-high heat. In batches, add scallops; cook 3-4 minutes on each side or until scallops are firm and opaque. Discard toothpicks. Sprinkle with parsley; if desired, top with additional salt and pepper. Serve with seafood cocktail sauce if desired..
