Ingredients :
- 10 bacon strips
- 1 tablespoon packed brown sugar
- 3/4 teaspoon ground mustard
- 3/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 pork tenderloin
Directions :
- Preheat oven to 425°. Arrange bacon strips lengthwise in a foil-lined 15x10x1-in. pan, overlapping slightly. Combine brown sugar, mustard, garlic powder and salt; rub over pork. Place tenderloin on center of bacon, perpendicular to strips.
- Wrap pork with bacon, overlapping ends. Tie with kitchen string at 3-in. intervals.
- Roast in oven until a thermometer inserted in pork reads 145°, 25-30 minutes. Remove string; let stand 5 minutes before slicing.
