Ingredients :
- 1-1/2 pounds small Yukon Gold potatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1 tablespoon minced fresh parsley
Directions :
- Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 12-15 minutes. Drain; let cool 5 minutes.
- Preheat air fryer to 400°. Transfer potatoes to a cutting board or baking sheet. Using the bottom of a glass or a potato masher, flatten potatoes to 1/2-in. thickness.
- Toss potatoes with olive oil, salt, garlic powder and pepper. Transfer to greased air fryer basket. Cook until golden brown, 15-20 minutes. Garnish with parsley.
