Air-Fryer Latkes

Latkes are wonderful with Hanukkah staples like sufganiyot, brisket, kugel and matzo ball soup. But you can also serve them with a big salad or fried eggs. I love to serve them on a latke grazing platter with different items like smoked salmon, pickles, olives, cheeses, greens like arugula, and whatever other toppings you can come up with.

Ingredients :
  • 2 medium potatoes, peeled
  • 1 large egg
  • 1/3 cup chopped onion
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • Cooking spray
  • Optional: chopped chives or green onions, sour cream and applesauce
Directions :
  1. Finely grate potatoes; firmly squeeze and drain any liquid. Place potatoes in a large bowl. Add egg, onion, flour, salt, pepper and garlic powder; mix well.
  2. Preheat air fryer to 375°. In batches, drop batter by 1/4 cupfuls onto greased tray in air-fryer basket; press lightly to flatten. Spritz with cooking spray. Cook until golden brown, Turning half-way through cooking, 12-17 minutes. If desired, sprinkle with additional salt & pepper and top with chives; serve immediately with sour cream and applesauce.
